Hazelnut Finished Holiday Ham!
The holidays are right around the corner, and it's not too early to reserve your ham and check that item off your list! A Good Food Award winner in 2014 and named Portland's Best Ham by Willamette Week in 2015, our whole-muscle hams are smoked over applewood & pecan, fully cooked and only needing to be re-heated.

After 10 years in the making, our own NW style Prosciutto Pacifico is ready!
This year's batch, from legs cured late 2013 & early 2014 is now ready & in our case! Offered thinly sliced from the deli case, or pre-packed packages of bones, cubes & thick slices for cooking.
Now available for mail ordering! 4oz packages of thinly sliced prosciutto are shipped via USPS Priority Express. Meaty bones, cubes & thicker slabs are also available for cooking.

We offer all the provisions you need for your gatherings & picnics, packaged nice & neat for you to arrange on your own platter at home. Platters are available in 3 sizes of 2 different styles - Deli, with your choice of various deli meats & mustards; and Charcuterie, with Pio Tosini prosciutto & your choice of types of coppa, lonza, pate, mustards and extras. Although all items are available individually in our case, our platter provisions will save you the agony of having to make the difficult choices of what to include, and (more importantly) save you lots of time waiting for us to slice everything!
Half Pig Program
For those that enjoy the challenge of "nose to tail" cooking, or are just comforted by having a chest freezer full of provisions we offer a Half Pig Program. For a flat fee ($650) you receive half of a 270lb Hazelnut Finished pig, butchered to your specifications (with our guidance through defined choices) and packaged in clear, labeled vacuum-sealed bags. You can exchange portions for cured items for a nominal extra cost, and don't have to take all the bits you just won't use.
