Late in the evening on February 22, an electrical fire broke out at our retail location. Although the fire damage was contained to the very front of our shop, the smoke destroyed 100% of our products - including several years' worth of our award-winning Prosciutto Pacifico.


We have established temporary production while we rebuild, and have Easter ham, fresh sausages, and many of our cured items available for purchase online or through our farmers market.

We have established a GoFundMe campaign to help us and our staff re-establish our production and sandwich counter.

The Shop Online tab contains items available for purchase in set amounts. The Marketplace tab has a general list of products available through emailing to arrange an order.

As we recover from our fire, we will not be fulfilling any orders for our coppa, lonza or Prosciutto Pacifico.

Sandwich Counter

Our sandwich counter is currently closed due to the electrical fire. We are working on a temporary counter nearby the shop during the rebuilding process, and hope to have that open by early June!

Hazelnut Finished Ham!

A holiday favorite, but great any time! A Good Food Award winner in 2014 and named Portland's Best Ham by Willamette Week in 2015, our whole-muscle hams are smoked over applewood & pecan, fully cooked and only needing to be re-heated.

Half Pig Program

For those that enjoy the challenge of "nose to tail" cooking, or are just comforted by having a chest freezer full of provisions we offer a Half Pig Program. For a flat fee ($650) you receive half of a 270lb Hazelnut Finished pig, butchered to your specifications (with our guidance through defined choices) and packaged in clear, labeled vacuum-sealed bags. You can exchange portions for cured items for a nominal extra cost, and don't have to take all the bits you just won't use.

Prosciutto Pacifico

Our 2-year old Prosciutto Pacifico won a Good Food Award in January, 2017. Unfortunately, a month later an electrical fire destroyed 100% of our inventory. We are working to revive production as quickly as possible, and will post updates as they occur!
